Easy Easter nest cupcakes

Even though Easter is over for another year, I thought I’d share these super easy Easter nest cupcakes with you. We had a lovely family lunch at my Sister’s house on Easter Sunday and I took along Easter nest cupcakes for dessert.

I suspect these easy Easter nest cupcakes really need little explanation. But if you are curious, I simply made some cupcakes and topped them with vanilla icing. I do wonder if green icing may have been better, so the nest looked like it was in a tree. Or perhaps I am over thinking it?

To decorate the Easter nest cupcakes, you’ll need two Flake bars and some ‘speckled eggs’. Actually finding these speckled eggs was a challenge. It turns out that reject/two dollar shops are the most likely stockists!  Start by breaking up two Flake bars to form the branches of the nest. When it came to actually building the nest, I found it easier to place the eggs on top of the cupcake and then construct the nest using the Flake by placing it around the eggs. Alternatively you could make your nest first and place the eggs inside it. Whatever works for you! For some reason three eggs looked the best to me and I like to lay one or two on their side. Again, there’s no right or wrong way!

While the easy Easter egg cupcakes looked appealing, I’m afraid they weren’t as light and fluffy as usual. Might have had something to do with forgetting to add the milk!

We’ve still got plenty of Easter eggs to get through when we return to Wallace St. I’d best stay away from cupcake making for a while! How’s your Easter egg stash looking?
